Food hygiene certificates and the law

UK food hygiene regulations require caterers to have food hygiene training or be closely supervised and instructed by someone who does. The course you need depends on the type of food you handle and whether you supervise others.

By law, you also need HACCP training if you are responsible for developing or maintaining a Food Safety Management System (FSMS).

Choosing the right level

  • Level 1 — induction / low-risk food handling
  • Level 2 — preparing open high-risk food
  • Level 3 — supervisors and managers
  • Level 4 — senior managers / those who train others
  • HACCP — anyone maintaining an FSMS

Certificates help your hygiene rating

Food hygiene rating schemes consider whether you and your team have sufficient and up-to-date food hygiene training. EHOs also look at how well teams understand and follow your food safety management system.

Proving that all team members are properly trained goes a long way toward helping you obtain a 5 out of 5 rating.
